A Basic class aimed at those who do not have any experience of indian cooking

On arrival you will be greeted with a cup of our house blended chai over which we introduce the day's lesson.

Lalita will then speak about the spices and their use, how and when to temper the spices and balance between flavours.

This day will give you the confidence to recreate what you have learnt at your home.

The day includes making

Chapatti .................................. You will learn how to make your own chapatti dough and the subtle art of using the velun, a traditional indian rolling pin to create your own chapatties I roll my own chappati now having mastered the skill. I used to watch my mother make them, willing her to roll them faster and waitng to receive a hot buttered chappati freshly cooked, nothing beats it!

Mung bean curry........................... A mung bean dhal - a basic favorite, I love this curry as it reminds me of my childhood, a delicious comforting mung bean curry made with delicious spices, curry leaves, tomato and ginger, the perfect balnce of spicy, sweet and salty, served with buttery rice and chappati.

Pilaf rice..........................
A delicious rice, rice is easy once you know how and so rewarding, avoid a sticky lumpy affaire and learn to do it right.

Riatha..........................
A clean tasting yoghurt and cucumber dip, the perfect accompaiment.

Spinach & Potato........................
A great dish that you can cook in advance and serve cold as a salad or cook and serve fresh. When in season an absolute favorite at our markets.
