On arrival you will be greeted with a cup of our house blended chai over which we introduce the day's lesson. Lalita will then speak about the spices and their use, how and when to temper the spices and balance between flavours.

The day:

Chevti dhal
A mixture of different dhals, traditionally made with what was left in the storage tins mixed together, the combination works so well we purposefully mix up the dhals and make this hearty warming dhal
, delicious on its own or simply with rice

Rotla..........................
This bread is made with course corn flour and shaped using the palms of your hands, perfect hearty thick flat bread to soak up your lovely your dhal, this bread can be made with bhajri flour also (millet flour)

Dhokri..........................
A favorite from my childhood, a delicious spicy gram flour 'pasta' is made and cooked with peas in a delicious rich sauce, serve this with a salty knob of butter and feel like you are wrapped in a cashmere shawl.

Tikki Puri........................
Puri are made with a spicy dough rolled into discs which are then fried, as an acompaniment to a meal, delicious, as a snack with chai, perfect.

Riatha..........................
A clean tasting yoghurt and cucumber dip, the perfect accompaiment
